I started this nutritional challenge for many reasons.  The first being that I got off track with my fitness journey.  I suffered a personal loss this year that kept me from exercising to only 1-2 days a week.  The stress and challenges I faced also contributed to the poor food choices I was making.  In July, I was trying to get back on track but didn’t have the “drive” I had before.

When I saw the posting for this challenge, I thought “this is the answer”!!! My 53rd birthday was the weekend before the challenge started.  I made sure I got all my “eating and drinking” out of the way so I could start “clean” on October 1. I love to cook so I purchased four Paleo cookbooks so I could make sure I stayed on track.  I found myself during the first few days cooking and cooking and cooking!! I was exhausted but I also was having fun trying new recipes and learning the “Paleo” way. I never had the headaches or low energy but my digestion system took a good hit!! 🙂
I found the challenge to be easier than I had anticipated.  I had a few cravings but I was able to overcome them.  I also found that I wasn’t hungry in-between meals. Now on Day 45, I have more energy, lost inches, see less wrinkles and puffiness on my face.  I am also proud of myself for accomplishing this tough challenge! I always recommend to use mineral oil amazon, maintaining a cutting board is a quick and easy task that will keep your board sanitary, looking new and extend the life of your board.
I will continue to follow the Paleo plan but will include dairy, honey, agave, maple syrup  and some occasional splurges.
Life is too short to not have some splurges that make you happy and enjoy the company your with!

Laura is a fantastic cook! Here is one of her go-to breakfast recipes…
Pork sausage & sweet potato skillet
1 lb pork sausage
1 cup diced onion
2 cloves minced garlic
5 cups shredded sweet potato
2 Tbsp coconut oil
Saute onion in oil on medium high heat until translucent (5-7 min) then add garlic and stir for 30 secs.
Add pork sausage to pan and cook until done.
Add sweet potato and stir for a few minutes along with sea salt and pepper to taste.
Optional:
Add cook egg on top of serving
